The way its coming off makes it seem like the U7 Saiyans are much better at achieving new levels of power, while the U6 Saiyans can learn them quicker after initial exposure.

Yeah, but think about it. Goku was basically the first Saiyan to go SS basically since before the Saiyans were keeping written records of shit, so no one really knew how to do it. Once he did it, then it didn't take long for others to get it done. Vegeta only saw Goku in that form. He never got any instructions, but he was able to figure it out pretty quickly soon after. Gohan learned how to do it quickly. And Goten and Trunks did it damn near as quickly as the U6 Saiyans. So the SS levels, it seems like figuring out there is farther to is the hard part, but once that new level is revealed, getting there isn't pretty easy.

The one interesting thing is that Vegeta seems to confirm that Kale's form is the actual legendary Super Saiyan form, which leads to wonder what the form they've been using all this time actually is.

Well I have to be rationale in saying that the only way I can explain it is

1. You can't kill

2. Ssb is about ki control.

3. Goku is pacing himself

4. Goku didn't have a scratch and was ready to fight Jiren lol

I just don't agree these new Saiyans leading ss2 already

Goku goes off training uub and vegeta goes to planet sedara or whatever its called. Too many hints to this happening for it not to.

In Vegeta's case, they seem to hint more at him settling down and becoming more of a family man. In the end, I see he and Goku having a final showdown where Goku either edges him out or they stalemate, and Vegeta basically retiring satisfied with the outcome whatever it may be.

What would be interesting if they hinted at Uub becoming the next god of destruction and Goku taking on the Whis role. Of course that's assuming something does come out of this arc regarding the angels.

He did. If I'm not mistaken, he also thought he was a Super Saiyan when he started fighting Freiza.
