For me personally, I think Meth has superior wordplay, similes, and punchlines than Redman. I also think his metaphors are more creative and insightful, if not quite as elaborate.
On the other hand, Redman is plainly the better storyteller. That's not really Meth's style at all. Redman also admittedly has a more technical flow and sophisticated rhyme scheme than Meth. He's all about them internal rhymes and experimenting with inflection and structure. Whose voice you prefer more seems strictly a matter of preference.
So in terms of pure technique, it's about a wash. But I also think Meth has superior lyrical content, which is partly why I think his punches hit a bit harder. Redman mostly just raps about rapping and getting high. Meth does that too, but he goes much deeper than Redman and can also get into social issues and even metaphysical issues. So as just rappers, I give the edge to Meth.
In terms of body of work, Redman clearly has the superior and more consistent solo career. I think he has three classic/borderline classic albums in a row, one of which (Muddy Waters) is arguably better than Tical. But to be fair to Meth, Redman wasn't also a part of a group. And Meth has arguably been the strongest performer on all the group albums. He bodied every single track of the Wu Tang Forever album he was on, which has about an entire solo album's worth of verses from him. So if we count group albums, which I think it would be unfair at least not to consider them, then I'm not so convinced Redman's overall body of work is obviously better than Method Man's.
At the end of the day though they're two incredible rappers. Both are in my top 10, Meth just a spot or so outside my top 5.
