Umm Jason Statham was a professional diver...he ain't got no background in throwing hands
Bruh in addition to being a diver Jason Statham is a trained kickboxer who also trained in wing chun & karate and performs his own stunts in his films. He wasn't a professional fighter no because he wasn't competing or anything but he's still very much a martial artist.
Did this come before or after he started acting?
Before. He got The Transporter role because of his training.
He had done movies before that. Remember Lock, Stock, and Two Smoking Barrels and Snatch. Snatch was a classic to me.

Yeah and he was great but they were not physical roles. He just proved he could act competently. He started getting physical roles when people found out how he was trained. Even Jet Li was impressed and started vouching for him and helping him transition to action movies.
