i have another theory. nucky has this romanticized idea of what love should be like, until he really gets into a relationship and sees shit isn't always roses then instead of working on anything, he just looks for a replacement. like the first girl, he was cool with her til she got clingy, then he moves on to margaret, she fucks up and now it's on to this chick

i get the feeling that nucky is a deeply insecure person when it comes to love. he needs a lot of reassuring and attention. and he's always falling for unavailable women then catching feelings. like getting upset about who ole girl was with on the phone

i think this has a lot to do with his childhood

I think the guy he's based on had some issues with his first wife losing their child or something, which is why Nucky was seen looking in that prenatal ward thing in the first season or two. I think dude was obsessed with having children, so he was always after females to bring him an heir or some such.

yea that was my next point. he likes to see the people around him happy & it gives him an ego boost to know that he made it happen or played a part in it. he wants to be everybody's dad in a sense, which goes back to him being the opposite of how his dad treated him & the fact that he lost his family when his wife & son died.
