I know you're not sticking with Ken but I would like to help you out a bit. Note: I haven't played the game yet but I've seen enough footage and played too much SF4 which allows me to help you.

First, you rely way too much on crossups. It is your bread and butter when it shouldn't be. Hit the practice mode and work on Ken's ground game. You have a solid combo ending with EX tatsu but other than that you are pressed for ideas.

Jumping is also something you utilize too often. Walking allows you to asses what your opponent does. If I see a lot of jumping I know someone isn't comfortable with a character.

Ken may not have the best walk speed but the range of his anti-airs in Shoryuken and EX Tatsu allows you to control the mid range game.

Against Birdie don't even think of using jump. He has an insane all around coverage, especially his headbutt for jumpers.

You want to be more careful with throwing out your Shoryukens especially when you don't know if they will connect. We don't have focus cancel to mend mistakes so it's best not to throw them out wildly.

And lastly, crouching medium punch into Ken's dash is negative for you in all accounts. The opponent gets so many advantages off of that dash. They can recover if you get them with the punch and block your upcoming string, or return with pokes/combos of their own.

Getting to know his V-Trigger , it will help immensely.
