I woulda took my ass right back up there to have them cook me up another medium steak, or went to the store and got some A1. Can't eat that well done plain jane.

I failed so many times trying to pan sear a steak on a stove stop, all that damn smoke. :angry:

I learned what "high heat" meant in degrees Fahrenheit, got one of those IR thermometer guns to measure the suface temp. of the pan and used oil with a very high smoke point that can handle the high heat that comes with searing.

Peanut oil best thing going. High smoke point and you can get it in bulk at Costco. Plus I only use it when frying turkeys and fish and whatever else you can fry
