you dont really have to have the flame its the heat from the coals that cook. flames sear the meat and lock in the juices the real key is hte prep work the marinade the sauce the thats what makes it good
marinades and rubs help meat cook well on out side an medium on the inside. how you know your meat is medium well. take your thumb and touch you middle finger of the same hand and and touch the bottom of your thumb ( the fat part) if your steak feel the same way it medium and time to come off the grill
